Ooh, this question is tough! I've bought almost every special cat buyable with cat food so let me run you through each one and what it's good for. I will explain the bold words at the bottom.
The Cat God (bought using 2000 XP): Useful for getting out of tough situations, for example, when you're so close to beating the enemy but then a Shadow Boxer K comes out and almost kills you . Usually not worth the cat-food to use him though.
Ninja Cat : Ninja is a brilliant cat for early-game players, and true form lowers cost giving it capability to be a spam cat. Has the hidden trait Multi-Hit Lvl2. Good against red enemies (which you encounter a lot of in EoC) but pretty trash in SoL and ITF due to lack of good numbers of red enemies. Continue using him in stages with a lot of red though, it can be good as a meatshield on its own, with decent HP and decent ATK.
Sumo : Not all that great. Has the hidden trait Multi-Hit Lvl3 Basically ninja cat but not stronger against red. Has about the same average ATK speed, just, it sends them out a flurries of 3 at a time. Not all that great and not worth the cat food.
Samurai Cat : The best Expensive-type meatshield you will get without gacha. Costs a lot but makes up for it with its health and ATK. Decent cooldown time makes him a good meatshield for late-game players who gain like 600 cash per second at lvl 1 worker cat, going alongside their Crazed units.
Zombie Cat : Better then fish cat. Good attack power (even against non-red) and good health makes it a good early-game attacker. I use it all the time in almost all of my formations. And, hey, combine it with the commonly used Rocker Cat for the Catcombo "Deathrock" which is a catcombo that gives Cannon Start Level UP (Sm).
Cats in a Box : Great speed, good attack power, has the hidden trait "Rebound" and an area attack. Good cat overall, great for treasure-hunting however there is a better alternative for early-stage hunting that you can get no-gacha as well. Overall a good cat, weak while attack is cooling down.
Bondage Cat : Trash
Dom Cat : Trash until True Formed. I didn't buy it, so if you want more info on it click the link
Kung-Fu Cat : Not all that great. Expensive to upgrade and most expensive special cat to buy, mostly useful in TF (true form) but, I mean, come on, if you can beat the Insane difficulty Awakened Stages then you likely have better alternatives. Evolved Form gets hidden trait Multi-hit Lvl3 but otherwise not that great. Waaaay too costly. Costs too much cat food to unlock, and costs too many... um... ¢ to deploy during a battle for what it does.
Actress Cat: Roll a gacha instead for a chance to get the stronger variant. Weaker variant of Salon Cat.
Skirt/Panties Cat: Gross cat, except for one thing: they're cheaper but weaker. Just use Gross instead. Or even better, it's evolved/true form.
Mr.: Remember earlier in Cats in a Box's description I said that "there is a better alternative for early-stage hunting that you can get no-gacha as well"? Well this is the character I'm talking about. Fastest cat you can get early-game and brilliant for early-treasure hunting. Combine with Zombie Cat to get CatCombo "Biohazard" which gives Research Power UP (Sm). Otherwise, not all that great. Worth it for early-game treasure hunting though.
And that's all the special cats buyable with cat-food that I'm aware of.
Now for bold descriptions:
Multi-Hit (Has the hidden trait Multi-Hit Lvl2 (ninja cat), Has the hidden trait Multi-Hit Lvl3 (sumo cat), Evolved Form gets hidden trait Multi-hit Lvl3 (kung-fu cat)). Note: hidden traits are traits that aren't shown in the cat-guide. Multi-hit means that a unit attacks multiple times in their attack animation. Multi-hit Lvl1 isn't a thing because that's one hit per attack. Multi hit Lvl2 gives 2 hits per attack, Multi hit Lvl3 gives 3 hits per attack, etc etc.
Awakened Stages (the Insane difficulty Awakened Stages (kung-fu cat)): Awakened stages are the stages you get the True Forms of special cats from. They typically have the difficulty rating "Insane" Similarly, Manic Stages are basically just the Awakened Stages for the Crazed Cats.
Expensive-type Meatshield (The best Expensive-type meatshield (samurai cat)): Expensive-type meatshields are meatshields, but unlike Macho and Wall, they don't rely on spammability to be useful, but rather cost a lot, usually take a while to recharge, and have either rediculously high HP or the Metal trait. Note: Miss Moneko is not one of these, she costs too little to be called "expensive".
Rebound (has the hidden trait "Rebound" (cats in a box)): Cats and enemies with Rebound will, when they attack, stand in place until ready to attack again instead of running up to the front line and getting themselves killed. Tends to be common in Expensive-type meatshields. An example of rebound in a cat unit is Cats in a Box, and for enemy units, Doge Dark has rebound.

Good on you for having cyborg cat, I don't even have salon cat in the first place.
Note: Shadow boxer K is still hard for me, and probably a lot of other players, ok? I don't have any decent anti-black units, save for an Uber Super Rare, which is too expensive and it's likely most players reading this won't have it.
Edit: I recently got Salon Cat from a rare capsule, she's already at level 26 now

Note: Shadow boxer K is still impossible for me, and probably a very few of other players, ok? I don't have any bad anti-black units, save for an legend rare, which is too cheap and it's likely most players writing this won't have it.
Edit: I recently got Salon Cat from a rare capsule, she's already at level 1
